He -the owner of Korakukan- meant it to draw a picture
by arranging the food that he cooked, on plates.
This funny, sit-back owner is
actually throughly guarded
and I’ve seen him seriously facing everything
so, to avoid ruining his attitude
at the very last moment, by arranging food as a picture
I am experimenting/researching/studying
seriously following my own sensibility
so that I can be respectful to the owner and guests.
A beautiful tone of the colors appears
in the bamboo shoots pickled in plum vinegar.
The life here is the accumulation of valuable time
that is fun and useful.
